मैदे को छानकर उसमें नमक और मीठा सोडा मिलाएँ, फिर उसे दही डालकर, अच्छी तरह मैश करें।
फिर गुनगुने पानी से लचीला आटा गूंथ लें और 5 घंटे तक खमीर उठने दे।
खमीर उठने पर उसकी लोइयां बनाएं फिर बेलकर या हाथ से फैलाकर तेल में तले।
Bhature
Ingredients (Saamagri):-
All-purpose flour (Maida) – 250 grams
Salt – 1 teaspoon
Baking soda – ½ teaspoon
Yogurt (Curd) – ½ cup
Lukewarm water – As required
Oil – For deep frying
Method (Vidhi):-
Sift the all-purpose flour and mix in the salt and baking soda; then, add the yogurt and mix thoroughly.
Next, knead the mixture using lukewarm water to form a soft, pliable dough, and let it rest for 5 hours to allow it to ferment.
Once the dough has fermented, divide it into small balls (loaves); then, either roll them out with a rolling pin or flatten them by hand, and deep-fry them in oil.
